what you’ll need

  • 4 cups oatmeal
  • 1.5 cups seeds/ nuts (i used sprouted pumpkin seeds! bc i can’t consume literally a single other nut or seed!)
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup melted coconut oil
  • 1/2 cup honey (or maple)
  • 1 tsp vanilla extract
  • optional: 2/3 cup dried fruit, 1/2 cup chocolate chips

instructions

  1. Preheat oven to 350°F.
  2. Mix the oatmeal, nuts/ seeds, salt, and cinnamon.
  3. Add in the coconut oil, honey, and vanilla extract and mix well to coat every dry piece in the wet mixture.
  4. Pour the contents onto a parchment paper-lined backing sheet and spread it out to an even layer.
  5. Bake for 10 minutes, then stir the granola up and press it down flat to encourage it to bake together. Bake for 10 more minutes.
  6. Let cool entirely (45 minutes) before breaking up into crumbles with your hands.
