
ok so NOT the most cut-friendly but its DELISH and free from added sugars and extra-process ingredients!!

what you’ll need
- 4 cups oatmeal
- 1.5 cups seeds/ nuts (i used sprouted pumpkin seeds! bc i can’t consume literally a single other nut or seed!)
- 3/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup melted coconut oil
- 1/2 cup honey (or maple)
- 1 tsp vanilla extract
- optional: 2/3 cup dried fruit, 1/2 cup chocolate chips
instructions
- Preheat oven to 350°F.
- Mix the oatmeal, nuts/ seeds, salt, and cinnamon.
- Add in the coconut oil, honey, and vanilla extract and mix well to coat every dry piece in the wet mixture.
- Pour the contents onto a parchment paper-lined backing sheet and spread it out to an even layer.
- Bake for 10 minutes, then stir the granola up and press it down flat to encourage it to bake together. Bake for 10 more minutes.
- Let cool entirely (45 minutes) before breaking up into crumbles with your hands.
