
im sick as a dog on new year’s eve so all i have to show for ringing in the new year is this soup that nursed me back to health.. low cal tho so will be great when i get back to the grind too!

yields: 8 servings (i should’ve halfed it and made 4 but now i have some in the freezer for next time!)

what you’ll need
- 1 tbsp olive oil
- 2 ribs celery, diced
- 4 large carrots, diced
- 1 medium onion, diced
- 1 clove garlic, diced
- 10 cups chicken stock
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp oregano
- 1 tsp dried parsley
- 1/2 tsp red pepper flakes
- 4 cups of noodles (i used banza protein rotini until i ran out but it wasn’t quite the right shape anyways, the penne was a good soup noodle!)
- 3 cups shredded chicken (i got a rotisserie chicken from Costco and went ham)
instructions
- Add olive oil, celery, carrots, and onion to a large pot over medium-high heat. Cook for 3 minutes before adding the garlic and cooking for another 30 seconds.
- Add the chicken stock and all seasonings and bring to a boil.
- Add the noodles and cook until al dente.
- Remove from heat and add chicken.
- Slurp!
