
a simple marinade recipe for my chicken & veggies folks! goes super well with the Sweetgreen Harvest Bowl Copycat BUT is also super good on its own and with other sides!

yields: 2 lbs chicken
course: lunch or din (you could make an argument for breakfast too..)
prep time: 5 mins
cook time: 10-25 mins (depends on your desired cooking method)
total time: ~30 mins
what you’ll need
- 2 lbs chicken breast, sliced thin (this helps with cooking evenly!)
- 1/4 cup dijon mustard
- 1/4 cup pure maple syrup
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 tbsp apple cider vinegar (or lemon juice, just something acidic)
- 1 tsp salt
- 1/2 tsp pepper
instructions
- Combine all ingredients in a tupperware or ziploc bag and mix/ shake to combine well.
- Add chicken and let marinate for 30 mins to 8 hours.
- Cook as desired!
- I cook my chicken in the air fryer at 375°F for 20 mins, flipping in the middle and it comes out PERFECT every time.
- If grilling, baste some of the leftover marinade on top for extra flavor!

tip/notes: i typically like to make my preps overnight, but leaving this one too long isn’t ideal because of the acidity from the vinegar/ lemon juice. the recipe i got it from recommended no longer than 4 hours, but mine still was fine at 8 hours.
