what you’ll need

for the steak

  • 1.25 lbs skirt steak/ sirloin steak/ whatever cut you like to grill
  • salt and peppa

for the salsa criolla

  • 1/2 red onion, finely diced
  • 1/2 tsp salt
  • 1 garlic clove, minced
  • 1/4 cup red wine vinegar
  • 1 medium tomato, diced
  • 1 yellow bell pepper, diced
  • 1 tbsp olive oil
  • sprinkle of crushed red pepper flakes
  • 1 tbsp chopped fresh/ 1 tsp dried parsley

instructions

for the salsa

this is best made well ahead of time to let the flavors reeaallly meld… but i made it 5 minutes before the first serving so what do i know

  1. Add the red onion, salt, garlic, and vinegar to a bowl and let rest for 5 minutes to mellow the taste of the red onion.
  2. After the 5 minutes is up, add the rest of the ingredients and mix ‘er up.
  3. Leave in the fridge until you are ready to enjoy.

for the steak

  1. Season your meat with salt and pepper and let rest on the counter for 10-15 minutes before grilling.
  2. Grill on medium high for about 3 minutes on one side then flip.
  3. Cook until the internal temp reaches your desired doneness- I aimed for 135F.
  4. Let rest for a few minutes (ideally- but I was so hungry i ripped it up right away) and enjoy!!

this is an estimate using 5.4 oz of steak, and about a half cup of the salsa… change your proportions as desired

tips/ hints: i was too lazy to have any carb with this, but it def could’ve been enjoyed with some rice or potatoes!!
