what you’ll need
for the steak
- 1.25 lbs skirt steak/ sirloin steak/ whatever cut you like to grill
- salt and peppa
for the salsa criolla
- 1/2 red onion, finely diced
- 1/2 tsp salt
- 1 garlic clove, minced
- 1/4 cup red wine vinegar
- 1 medium tomato, diced
- 1 yellow bell pepper, diced
- 1 tbsp olive oil
- sprinkle of crushed red pepper flakes
- 1 tbsp chopped fresh/ 1 tsp dried parsley
instructions
for the salsa
this is best made well ahead of time to let the flavors reeaallly meld… but i made it 5 minutes before the first serving so what do i know
- Add the red onion, salt, garlic, and vinegar to a bowl and let rest for 5 minutes to mellow the taste of the red onion.
- After the 5 minutes is up, add the rest of the ingredients and mix ‘er up.
- Leave in the fridge until you are ready to enjoy.
for the steak
- Season your meat with salt and pepper and let rest on the counter for 10-15 minutes before grilling.
- Grill on medium high for about 3 minutes on one side then flip.
- Cook until the internal temp reaches your desired doneness- I aimed for 135F.
- Let rest for a few minutes (ideally- but I was so hungry i ripped it up right away) and enjoy!!

this is an estimate using 5.4 oz of steak, and about a half cup of the salsa… change your proportions as desired
tips/ hints: i was too lazy to have any carb with this, but it def could’ve been enjoyed with some rice or potatoes!!
