
one of the lower maintenance meals i come back to pretty often- and very versatile! switch out the broccoli, peppers, and potatoes with whatever is in season or strikes your fancy or change up the ratios if you’re in need of more protein/ fiber/ carbs for in your diet

what you’ll need
- 1/2 bag of mini potatoes
- italian seasoning
- olive oil
- 1 package pre-cooked italian chicken sausage, sliced
- 1 bell pepper, chopped into bite-size pieces
- 1 head of broccoli, chopped into bite-size pieces
instructions
tatos first
- Cut your potatoes into halves or quarters and add to a pot.
- Cover with cold water and bring to a boil.
- Let boil for 15 minutes.
- Preheat the oven to 400°F.
- Remove the potatoes from the water and toss with some olive oil and a hefty hand of italian spices.
- Lay them out on a sheet pan and cook in the oven for 10 minutes.
everything else
- Add the chopped bell pepper, broccoli, and sausages to the pan with the pre-cooked potatoes and drizzle with olive oil and more italian seasoning. Give everything a good fluff to mix.
- Cook for 30 more minutes at 400°F and enjoy!!
