back on my ground turkey grind & this time we’re bringing beans and protein pasta along for the ride to make a proteiny and fiber-filled meal that feels hearty enough to help me survive the winter

what you’ll need

  • 1 tbsp olive oil
  • 1.5 lbs ground turkey (costco size meat slab)
  • 1/2 yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tbsp tomato paste
  • 4 cups bone broth (i used 3 packets of bare bones instant beef broth and 4 cups of water)
  • 8 oz dry protein pasta
  • 1 tbsp italian seasoning
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 can cannellini beans, drained & rinsed
  • 1 cup fresh spinach, chopped
  • 1/4 cup plain greek yogurt
  • 1/4 cup milk
  • 1/2 cup grated parmesan cheese
  • 1/2 cup shredded mozzarella

instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the onion and ground turkey and cook until browned.
  3. Add in the minced garlic, sun-dried tomatoes, and tomato paste, mixing well to ensure everything is uniformly combined. Let cook for about 2 minutes.
  4. Add the bone broth, pasta, and seasonings and bring to a gentle boil over high heat.
  5. Cook for 10 minutes (or however long the pasta box says to cook the pasta).
  6. Turn the heat down to low and add the greek yogurt, milk, beans, spinach, and cheeses.
  7. Stir and let the cheeses melt and the sauce to thicken.
  8. Enjoy!
