what you’ll need

  • 1 1/2 cups mashed banana (i used 3 banans)
  • 1 egg
  • 1/3 cup plain greek yogurt
  • 2 tbsp melted coconut oil
  • 1/3 cup light brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups flour (whole wheat is best whole-foods-wise but when you have a costco bag of unbleached white flour you don’t fight it)
  • any mix-ins you want! i’m a cinnamon banana bread girly over chocolate chip but to each their own)

instructions

  1. Preheat oven to 350°F and grease a 9×4″ loaf pan.
  2. In a large bowl, mash your bananas into mush with a fork.
  3. Whisk in the egg, greek yogurt, and coconut oil, then add light brown sugar, maple syrup, and vanilla extract before whisking some more.
  4. Mix in the baking soda, cinnamon, and salt.
  5. Fold in the flour until just combined, making sure to scrape the sides and the bottom of the bowl to fully incorporate everything.
  6. Add any mix-ins if desired!
  7. Bake for 50-60 mins or until a toothpick inserted in the center comes out clean.

tip/notes: these can be easily made into banana muffins as well- just portion out into a muffin tin and bake for 20-22 mins or until a toothpick inserted into the center comes out clean!
