diy shredded chicken for when you don’t want to just rip up a rotisserie chicken (nothing wrong with that either go crazy)

what you’ll need

this is less of a recipe and more of a method, so customize the amounts to your needs:

  • some olive oil
  • couple sprinkles of s&p
  • chicken breasts
  • water (you just need enough to cover the chicken in the pan)

instructions

  1. Heat olive oil in a saucepan over medium-high heat.
  2. Season both sides of the chicken with the salt and pepper.
  3. Sear the chicken in the pan for 3-4 on each side.
  4. Add enough water to cover the chicken breasts, then poach the chicken until they reach an internal temp of 165°F.
  5. Shred the chicken using 2 forks, and enjoy in whatever the heck you’re making!!
    • i’ve also seen people use a hand/ stand mixer on tik tok to shred their chicken but I can’t say I’ve given that one a go…
