took this before adding my tzatz and feta #sorry but it is included & prepped i swear

i have one 1 metric ton of tzatziki from audrey’s bday and needed a small side to go with it but need a bit of a break from chicken and turkey so i found this for some shramp to switch it up!!

total time: 25 mins


what you’ll need

for the marinated shrimp & veggies

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsely, chopped
  • 2 garlic cloves, minced
  • 1 1/2 tsp paprika
  • 1 1/2 tsp dried oregano
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 lb shrimp (don’t matter how you buy em as long as they’re tail-off, peeled, and deveined by cooking time)
  • 2 small zucchinis, sliced into half moons
  • 2 bell peppers, chopped into 1in pieces

for the rest of the bowl

  • 1/3 cup tzatziki
  • 1 cup dry rice, cooked
  • feta perhaps??

instructions

  1. Combine all marinade ingredients (not the shrimp or the veggies yet) together in a bowl.
  2. Toss half the marinade with the shrimp and the other half with the prepped veggies.
  3. Cook the veggies in a skillet or wide sauce pan for 8 minutes or until they’re tender, then remove them from the pan.
  4. Cook the shrimp in the same pan for 2 minutes or until pink and opaque.
  5. Divide your rice, shrimp, and veggies into 4 bowls and top with tzatziki and feta!!
