what you’ll need

  • 1/3 cup egg whites (or 2 eggs)
  • 3 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1 1/4 cup milk
  • 1 lemon, juiced & zested
  • 2 1/4 cup oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • a sprinkle of salt
  • 1 cup fresh raspberries

instructions

  1. Preheat oven to 375 F and grease a 9×13 baking dish.
  2. In a large bowl, whisk together all wet ingredients (egg, oil, maple syrup, milk, lemon juice)
  3. Add the dry ingredients (oats, cinnamon, baking powder, and salt) and mix well.
  4. Gently fold in the lemon zest and raspberries.
  5. Pour into prepared dish and bake for 40 minutes, or until the edges have darkened and the middle is set.
  6. Wait 20 minutes to cut into 6 even squares. Put in the refrigerator for up to 5 days!
  7. Service with maple syrup or honey, or enjoy plain!
