what you’ll need
for the baked oatmeal bars:
- 2-1/2 cups of rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 (slightly mushy) bananas
- 2 large eggs
- 1/4 cup maple syrup
- 1-1/2 cups milk
- 1 tsp vanilla
- 1 cup blueberries
optional toppings:
- another banan
- more blueberries
- could add nuts i guess if you aren’t planning on sharing or whatever 😡
instructions
- Preheat oven to 350F. Oil an 11×17 baking pan to prep.
- Combine dry ingredients (oats, baking powder, baking soda, cinnamon, and salt) in a large bowl.
- In a separate bowl, mash bananas then add eggs, maple syrup, milk, and vanilla. Mix until smooth and consistent- I used a hand mixer for this but its not required.
- Dump wet ingredients into bowl with dry ingredients and mix until combined well.
- Distribute evenly throughout your pan, and add toppings as desired.
- Bake for 40 minutes, or until cooked all the way through (hit that toothpick trick girl).
- Cut into bars and keep in fridge for up to 4 days.

tip/notes: i think adding protein powder could be nice if you wanted a boost! maybe add a smidge more milk to even out the wet/ dry ratio if you try it- and let me know how it goes!!
