what you’ll need

for the ground turkey

  • 1 tbsp olive oil
  • 1.7 lb (aka costco container size) ground turkey
  • taco seasoning (my fav is street tacos’ pollo rojo seasoning YURMM) or some combo of the following seasonings if you don’t have/ like the premade stuff:
    • chili powder
    • cumin
    • red pepper flakes
    • cayenne pepper
    • garlic powder
    • onion powder

for the bowl (for a total of 4 servings)

  • 3 cups cooked rice (if you have more carbs & cals allotted go ham, i’ll stare longingly from afar)
  • 1 cup black beans
  • 11-1/3 cup guac (check out my guac recipe for homemade!!)
  • couple handfuls of spring mix
  • 2 roma tomatoes, chopped
  • 1 cup of corn
  • plain greek yogurt (sour cream replacement- if this repulses you i apologize but it does work i swear)

instructions

  1. In a medium skillet, heat olive oil on medium-high heat. Toss turkey in there when the skillet gets warm.
  2. Add seasoning and cook to internal temp of 165°F (5-10 mins depending on how big your skillet is- size matters)
  3. To your cooked rice, add lime juice and some cilantro.
  4. Assemble bowl and enjoy!

as usual, the macros will vary depending on what you put on your bowl. this is for the ingredients in the amount that i listed above!

tip/notes: this is one of my fav meal preps- i put all the cold toppings in one tupperware and the rice and turkey in another to heat up. hits every time!

    Tried this recipe, didn’t have ground turkey so replaced with beef patties. Replaced roma tomatoes with ketchup, rice with sesame buns, guac with mayo and added lettuce. 5/5 would try this recipe again.
