what you’ll need
- 1 cup old fashioned oats
- 3/4 cup whole wheat flour
- 1/3 cup light brown sugar
- 1/4 teaspoon salt
- 6 tbsp melted coconut oil
- 2 cups finely diced strawberries
instructions
- Preheat oven to 375°F. Prep an 8x8in baking pan with parchment paper (leave enough excess to be able to pull the bars out of the pan with after cooking).
- Combine the oats, flour, brown sugar, and salt in a bowl.
- Slowly pour the melted coconut oil until the dry ingredients clump up.
- Put half of the mixture into the pan, pressing down to form a solid crust.
- Scatter the strawberries over the crust, then top with the remaining crumb mixture.
- Bake for 35-40 minutes until the top is golden brown.
- Let the pan cool completely (i prepped this the day before so i let it cool over night, but you could also put it in the fridge to expedite)
- Once cooled, pull out by the parchment paper and cut in the 9 bars. ENJOYYYY

i thought about using monkfruit sweetener at first but was worried it would be mid- i think it would’ve been delish either way tho and could’ve cut like 25ish calories a pop if you want to try!
