what you’ll need

  • 1 cup old fashioned oats
  • 3/4 cup whole wheat flour
  • 1/3 cup light brown sugar
  • 1/4 teaspoon salt
  • 6 tbsp melted coconut oil
  • 2 cups finely diced strawberries

instructions

  1. Preheat oven to 375°F. Prep an 8x8in baking pan with parchment paper (leave enough excess to be able to pull the bars out of the pan with after cooking).
  2. Combine the oats, flour, brown sugar, and salt in a bowl.
  3. Slowly pour the melted coconut oil until the dry ingredients clump up.
  4. Put half of the mixture into the pan, pressing down to form a solid crust.
  5. Scatter the strawberries over the crust, then top with the remaining crumb mixture.
  6. Bake for 35-40 minutes until the top is golden brown.
  7. Let the pan cool completely (i prepped this the day before so i let it cool over night, but you could also put it in the fridge to expedite)
  8. Once cooled, pull out by the parchment paper and cut in the 9 bars. ENJOYYYY

i thought about using monkfruit sweetener at first but was worried it would be mid- i think it would’ve been delish either way tho and could’ve cut like 25ish calories a pop if you want to try!
