what you’ll need
for the crust
- 6 graham crackers, crushed
- 1/4 cup monkfruit sweetener (or sweetener of choice)
- 1/4 cup butter, melted
for the filling
- 1/2 cup low fat cream cheese
- 1 cup non fat plain greek yogurt
- 1 eggs
- 1/3 cup sweetener
- monkfruit sweetner is expensive so i used half that and half reg granulated sugar
- 2 tbsp all purpose flour
- sprinkle of salt
- 1/2 tsp vanilla extract
instructions
- Preheat oven to 325F and line a muffin tin.
- Combine the crushed graham crackers, sweetener, and butter in a mixing bowl.
- Evenly distribute the mixture among the 12 cups, and press to make your solid crust.
- To make the filling, add all the ingredients into a blender and process until smooth.
- Distribute among the 12 cups, and tap the pan on the counter a few times to get everything evenly settled.
- Bake for 15-17 minutes, until the middle is set.
- Let the pan come to room temp, then move the cups to the fridge for at least 4 hours to fully chill before enjoying.
