what you’ll need

for the crust

  • 6 graham crackers, crushed
  • 1/4 cup monkfruit sweetener (or sweetener of choice)
  • 1/4 cup butter, melted

for the filling

  • 1/2 cup low fat cream cheese
  • 1 cup non fat plain greek yogurt
  • 1 eggs
  • 1/3 cup sweetener
    • monkfruit sweetner is expensive so i used half that and half reg granulated sugar
  • 2 tbsp all purpose flour
  • sprinkle of salt
  • 1/2 tsp vanilla extract

instructions

  1. Preheat oven to 325F and line a muffin tin.
  2. Combine the crushed graham crackers, sweetener, and butter in a mixing bowl.
  3. Evenly distribute the mixture among the 12 cups, and press to make your solid crust.
  4. To make the filling, add all the ingredients into a blender and process until smooth.
  5. Distribute among the 12 cups, and tap the pan on the counter a few times to get everything evenly settled.
  6. Bake for 15-17 minutes, until the middle is set.
  7. Let the pan come to room temp, then move the cups to the fridge for at least 4 hours to fully chill before enjoying.
