what you’ll need
for the potatoes
- 2 sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp salt
for the beef
- 1.25 lb lean ground beef
- 2 tbsp taco seasoning (i like the siete brand)
- 1 tbsp tomato paste
for the hot honey
- 1 cup honey
- 1 tbsp red pepper flakes
- 1 tsp apple cider vinegar
- 1/2 tsp cayenne pepper
for the rest of the bowl:
- 2 avocados
- 2 cups cottage cheese
instructions
air fry the sweet potatoes
- Toss the sweet potatoes with the olive oil and salt and air fry at 400F for 30 minutes, tossing them half way.
cook the beef
- Heat a large skillet to medium-high heat.
- Spread the ground beef throughout the skillet and let cook until nicely crispy on the bottom.
- Break it all up and mix in the taco seasoning and tomato paste.
- Drain any excess grease.
make the hot honey
- Add the cup of honey, tbsp of red pepper flakes, and 1/2 tsp cayenne to a small saucepan and bring to a simmer.
- Turn off the heat, and let the honey be infused.
- Strain out the red pepper flakes and add the remaining honey in a jar.
- Add the ACV and mix until well incorporated.
assemble the bowls
- Add 1/4 of the total cooked ground beef, 1/4 of the sweet potato chunks, 1/2 cup of cottage cheese, and half of an avocado (diced) to a bowl.
- Drizzle as desired with the hot honey.
- Enjoy!
