
#VLF (vegetarian lunch february) is over, but i have leftover lentils so i’m taking one more stab at a meatless meal before i give up and go back to chicken forever

prep time: 45 mins (30 mins of this is preparing the lentils)
cook time: 10 mins
total time: 55 mins
what you’ll need
- 1 cup dry brown/ green lentils
- 3 tbsp egg whites (or 1 egg)
- 1/2 cup parmesan cheese (or in my case, cotija bc i was out of parm)
- 4 tbsp whole wheat flour
- 1/4 cup parsley, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- sprinkle of black pepper
instructions
to prep the lentils
- Add 1 cup dry lentils and 2 cups water to a sauce pan. Bring to a boil, then reduce temperature and cook for 30 minutes, or until the lentils are no longer hard.
- Drain out any excess water.
to make the patties
- Add the cooked lentils and all the other ingredients to a food processor and pulse a few times- just until mostly combined, but not into a puree (unless you’re into that baby food texture i guess)
- From your slop, form 12 patties.
- Air fry for 10 minutes at 400F, flipping the patties halfway through.
- Eat up!

macros from a little over a cup of lentils total- just using up what i had left sorry!! cotija and whole wheat flour as opposed to other alternatives can also make a difference
