my sister has a pizza oven and me and my dad are health freaks that aren’t so fond of cauliflower… so here we are! my review is that it’s almost entirely devoid of flavor (like im licking air) and the texture is what you would expect of shredded zuke. basically just tasted like the toppings which i personally consider a win as a cheese fan and pizza crust’s #1 hater!!

prep time: 5 mins
cook time: 20 mins
total time: 30 mins
what you’ll need
- 2 medium zucchini
- 1/2 cup whole wheat flour
- 2 eggs
- 1 tsp dried oregano
- 1 tsp garlic powder
- sprinkle salt & pep
instructions
- Preheat the oven to 450°
F. Line a baking sheet with aluminum foil or parchment paper. Spray with cooking spray to really make sure the crust doesn’t stick.
- Using a fine grater, grate your zucchini and REEALLLY ring out excess moisture using a paper towel or cheesecloth
- yo shit will fall apart if its got too much moisture in it
- In a small bowl, combine the shredded zucchini with the other ingredients and mix well until fully combined.
- Split the contents of the bowl into 2. Dump each half of the contents onto the parchment paper, using a spatula or a fork to shape each into a circle (or heart, in my case).
- Put in the oven and bake for about 5-7 minutes, or until the top has begun to brown and crisp up.
- Flip the crust, and let cook for another 5-7 minutes.
- Remove from the oven and add toppings as desired.
- Cook for a final 5-7, as desired for your cheese to melt and your toppings to crisp up.
macros (estimate) & notes
| cals | 200 cals |
| carbs | 28g |
| protein | 13g |
| fat | 6g |
| sugar | 4g |
| fiber | 6g |
these macros are not including any toppings- i’m pleasantly suprised! i added chicken and mozz to mine so the protein was pretty good on these bad boys
tip/notes: maybe if i added more seasonings to the crust it would taste less like nothing and more like something… an experiment for next time!
