back again with another main chosen almost exclusively because it looked like it would be fire with tzatziki in a pita… and obviously it was! stamp of approval on flavor from kate and stamp of approval for being idiot-proof from faruq because he actually did (some) of the work
deets
prep time: 15 mins + marinating time
cook time: 15mins
total time: 30 mins
what you’ll need
- 1 cup plain greek yogurt
- 2 tbsp olive oil
- 2 tsp paprika
- 1/2 tsp cumin
- 1/8 tsp (a sprinkle) of cinnamon
- 1 tsp crushed red pepper flakes
- 2 tbsp lemon juice
- 1 3/4 tsp salt
- 1/2 tsp pepper
- 5 garlic cloves, minced
- 2 lbs boneless skinless chicken breast, cut into 1 to 1 1/2 inch cubes
instructions
- In a tupperware or ziploc bag, combine all marinade ingredients before the chicken. Squish the bag around to mix well, then add the chicken chunks to combine.
- Let rest in the fridge for a while (OG recipe recommended 8, but we waited maybe 1 hour and it was fine)
- Skewer the chicken bits and toss them puppies on the grill.
- Serve as desired!
- we recommend eating in a pita pocket with tzatziki and shirazi salad!! BUSSSS

calculated this by guessing how much marinade was left over in the bag- so very rough estimate here. each (of 5) servings came out to about 5 oz!
