back again with another main chosen almost exclusively because it looked like it would be fire with tzatziki in a pita… and obviously it was! stamp of approval on flavor from kate and stamp of approval for being idiot-proof from faruq because he actually did (some) of the work

yields: 5 servings

course: lunch or din

prep time: 15 mins + marinating time

cook time: 15mins

total time: 30 mins

what you’ll need

  • 1 cup plain greek yogurt
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1/2 tsp cumin
  • 1/8 tsp (a sprinkle) of cinnamon
  • 1 tsp crushed red pepper flakes
  • 2 tbsp lemon juice
  • 1 3/4 tsp salt
  • 1/2 tsp pepper
  • 5 garlic cloves, minced
  • 2 lbs boneless skinless chicken breast, cut into 1 to 1 1/2 inch cubes

instructions

  1. In a tupperware or ziploc bag, combine all marinade ingredients before the chicken. Squish the bag around to mix well, then add the chicken chunks to combine.
  2. Let rest in the fridge for a while (OG recipe recommended 8, but we waited maybe 1 hour and it was fine)
  3. Skewer the chicken bits and toss them puppies on the grill.
  4. Serve as desired!

calculated this by guessing how much marinade was left over in the bag- so very rough estimate here. each (of 5) servings came out to about 5 oz!
