
i stopped trying recipes from instagram once everyone started putting cottage cheese in everything, but this one came across my discover and i had to give it a try! SUPER easy to make & is super convenient all wrapped up in one lil guy

what you’ll need
for the roasted garlic
- 2 garlic bulbs
- 1 tbsp olive oil
- 1 tsp salt
for the chicken kefta
- 2 lbs ground chicken
- 2 tbsp tomato paste
- 1-2 (i used 1.5) yellow onions, grated & squeezed (with paper towel or cheese cloth) to reduce moisture
- 8 garlic cloves, minced
- 2 tsp smoked paprika
- 2 tsp cumin
- 2 tsp salt
- 2 tsp black pepper
- 1 tsp turmeric
- 1/3 cup fresh parsley, chopped
- 1/3 cup fresh cilantro, chopped
for the veggies
- 1/2 large red onion, diced
- 1 cup cherry tomatoes, quartered
- 1/2 cup fresh parsely, chopped
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp ground black pepper
for the roasted garlic paprika sauce
- roasted garlic made above
- 1/4 cup mayo
- 1/4 cup greek yogurt
- 2 tbsp lemon juice
- 1 tsp paprika
- 1 tsp pepper
for the wrap
- lavash bread/ pita/ tortilla
instructions
- Preheat oven to 400°F.
- Cut the tops of the 2 garlic bulbs off and drizzle with olive oil. Wrap in tin foil and bake on a baking sheet for 45 mins.
- While the garlic is roasting, prepare the chicken kefta by combining the chicken, tomato paste, onion, garlic, spices, and fresh herbs. Mix well.
- Also prep the veggie salad by tossing all the ingredients together.
- When the garlic is done, lightly oil the same pan and lay out the ground chicken mixture and press to 1/2-in thickness. Using a knife or spatula, divide evenly into 10 strips (cutting the short way, making about 1-inch wide strips)
- Bake for 15 minutes, then broil on high for 2-5 minutes to brown.
- To make the roasted garlic paprika sauce, squeeze the garlic bulb to remove most of the roasted garlic. Mix with the mayo, greek yogurt, lemon juice, paprika, and pepper.
- To assemble, slap a spoonful or 2 of the sauce on the lavash bread and add 2 strips of the kefta. Add in the veggies and roll her up.
- I pre-wrapped all of mine in tin foil for the week but lowkey regretted it because I have to heat it all up in one go. So if you are a fan of temp diff between your sauce/veggies & meat/pita I would suggest not making that same move. It’s still fire tho!
