
colorful, delicious, & nutritious!! i wouldn’t necessarily say its worth the $14 that the restaurant charges, but the amount of prep involved makes it almost make sense

what you’ll need
for the bowl
- ~2.5lbs chicken, cooked as desired (the maple dijon marinade is SO GOOD w this bowl)
- 2 large sweet potatoes, cut into large chunks
- 1 cup dry jasmin rice
- 1.5 cups bone broth
- 5 cups of kale, chopped
- a few apples (i used 2 1/2), diced
- 5 tbsp goat cheese, crumbled
- some seasonings for your chicken & potatoes: i used s&p, garlic powder, onion powder, and smoked paprika
- walnuts or almonds or something i guess 😐 don’t expect to see that in the rest of the recipe
for the dressing
- 1/2 cup balsamic vinegar
- 3 tbsp mustard
- 1 tbsp honey
- 1/2 cup olive oil
- s&p
instructions
hot bits first! chicken, potatoes, and rice
to maximize time, try to have these all going at the same time since they have similar wait periods that you can use to prep the cold bits (chopping the apples and kale and making the dressing)

making the dressing
- Combine all the dressing ingredients together and shake/ stir to combine well.
assembling the bowl
well this is the easy part…
- start with your base: lay down 1 cup chopped kale, about half a cup of rice, some potatoes (1/5 of your total chunks)
- Scoop 5 oz chicken on top.
- Sprinkle apples pieces and goat cheese crumbles on top.
- Toss with some dressing & voila!!

tip/notes: i made this for my work lunches, so i used my typical packing strat: elements to be reheated (rice, chicken, sweet potatoes) go in one tupperware and the cold elements go in another to be combined when i’m ready to munch
