actually the easiest meal prep i’ve made yet and SO good! featuring a kate staple, the mini naan from costco and a greek yogurt sauce that for once isn’t tzatziki

editing to say maybe don’t use a mini naan from costco if you want to actually make a wrap bc you cant even see it nor is there any wrapping about it

what you’ll need

for the chicken

  • 1 1/2 lbs chicken breasts, sliced into strips ~1/2″ thick
  • 1 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp ground black pepper

for the garlic yogurt sauce

  • 1 cup plain greek yogurt
  • 1/2 tbsp lemon juice
  • 1 clove garlic, minced
  • sprinkle of s&p

for the wraps

  • 5 mini naans from costco (or pita bread from anywhere i guess)
  • 2 cups romaine lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 large cucumber, diced
  • 1/4 cup fresh parsely, finely chopped

instructions

  1. In a ziploc bag or tupperware, combine the marinade ingredients and the chicken and mix well to coat the chicken in the spice blend.
  2. Let marinate for 1 hour or overnight.
  3. When ready to cook, pop the chicken into the air fryer in a single layer and cook for 12 mins at 375°F OR bake for 15-20 mins in the oven at 400°F on a greased sheet pan.
  4. To make the sauce, simply combine all ingredients together and mix well.
  5. Serve the chicken in the naan (or pita) with the other wrap ingredients, and drizzle the garlic sauce on top!
