
please welcome to the brekky menu overnight and baked oats’ cousin: scrambled oats! my dad used to make a variation (his topping of choice was apples) of this every single morning when i was a kid so this was half nostalgia-inspired and half i-saw-it-on-pinterest. it gets its texture from scrambled eggs, but the flavor is all banana and cinnamon.

what you’ll need
- 1 ripe banana
- 3 tbsp egg whites (or 1 egg)
- 1/3 cup oats (i’m an old fashioned-fan over quick, but to each their own)
- pinch of salt
- sprinkle of cinnamon
- toppings!!
- i put a handful of raspberries, but go cray
- greek yogurt
- honey
- jam
- seeds
- nuts (if you have to i mean :/)
instructions
- Start heating a medium-sized pan to medium heat with some oil (i prefer coconut or olive)
- In a bowl, mash the banana with a fork until pretty smooth then add the eggs and oats and mix well.
- Sprinkle your cinnamon and pinch your salt and mix again to combine.
- Dump the mixture into the pan and mix as you would scrambled eggs until they’re giving scrambled egg vibes.
- Eat with your fav toppings!

tip/notes: i wouldn’t really consider this a prep-able meal, but its so quick that it’s still a good option for busy mornings!
