for when you luvvvvv an omelette but don’t have omelette time in the mornings! some other recipes have milk or yogurt mixed in and might have better texture like a starbies egg bite, but i had a whole carton of egg beaters to use up so i went balls to the wall for the proteína

what you’ll need

my egg bites

  • 2 1/2 cups egg beaters/ egg whites OR 10 eggs
  • 1/2 of a medium red onion, chopped
  • 10 chicken sausage links, chopped
  • 1/2 of a red bell pepper, chopped
  • 60g sharp cheddar

other topping ideas i have that i want to try

  • parsley
  • bacon
  • ground turkey or chicken sausage
  • garlic/ garlic powder

instructions

  1. Preheat oven to 350°F and lightly grease 10 cups of a muffin pan.
  2. Pour 1/4 cup desired egg (or 1 egg) into each of the 10 cups.
  3. Divide the toppings evenly amongst the 10 cups and gently mix them.
  4. Bake for 20-23 minutes, checking the middle of the cups to ensure they are cooked through fully.
  5. Enjoy!!
