a little twist on my usual boring overnight oats (and a way to use the gallon of pumpkin puree i made from me and andrew’s jack-o-lanterns this year), these oats were so yurm and are one of my first attempts at coming up with a recipe myself- a real step towards epic chef status!! it took me a few tries to perfect my ratio, but here she is in all her brown gruel glory.

i must admit before you continue though, incorporating the pumpkin meant less yogurt and sacrificing a whole 1g of protein… so sorry for the betrayal but you have to believe its worth it for the pumpkin spice

yields: 1 serving

rest time: overnight (8 hours is the recommended amount of sleep for the average adult btw)

total time: 5 real minutes


what you’ll need

  • 3 tbsp greek yogurt
  • 3 tbsp pumpkin puree
  • 1/2 cup milk
  • 1/2 cup old fashioned oats
  • 2 tsp maple syrup
  • 1 tsp vanilla
  • 1/2 tsp pumpkin pie spice

i like my oats THICC and i think this may be an unpopular opinion, so increase one of the liquid ingredients if this texture if chewing cud- shouts lauren for this image- is not your vibe


instructions

  1. Combine all ingredients in a sealable container- I’ve got these little jars specifically for oats prep but a jar or tupperware works just dandy.
  2. Pop it in the fridge and leave overnight.
  3. Might be looking a little watery and unappetizing at this point, but mix it up and she’ll be good as new for maximum enjoyment.
