what you’ll need
- 1/3 cup egg whites (or 2 eggs)
- 3 tbsp olive oil
- 1/4 cup pure maple syrup
- 1 1/4 cup milk
- 1 lemon, juiced & zested
- 2 1/4 cup oats
- 1 tsp cinnamon
- 1 tsp baking powder
- a sprinkle of salt
- 1 cup fresh raspberries
instructions
- Preheat oven to 375 F and grease a 9×13 baking dish.
- In a large bowl, whisk together all wet ingredients (egg, oil, maple syrup, milk, lemon juice)
- Add the dry ingredients (oats, cinnamon, baking powder, and salt) and mix well.
- Gently fold in the lemon zest and raspberries.
- Pour into prepared dish and bake for 40 minutes, or until the edges have darkened and the middle is set.
- Wait 20 minutes to cut into 6 even squares. Put in the refrigerator for up to 5 days!
- Service with maple syrup or honey, or enjoy plain!
