what you’ll need

  • 100g old fashioned or instant oats
  • 90g whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 2 tbsp melted coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup honey
  • 60g raisins

instructions

  1. In a large bowl, whisk together the dry ingredients (oats, flour, baking powder, cinnamon, and salt)
  2. In a separate bowl, combine the coconut oil, egg, vanilla extract, and honey until uniformly mixed.
  3. Add the wet mixture to the dry, mixing until just combined. Fold in the raisins.
  4. Chill in the fridge for 30 mins.
  5. Preheat oven to 325°F. Line a baking sheet with parchment paper.
  6. Drop cookie dough into 12 rounded scoops on the sheet and press down to flatten slightly.
  7. Bake at 325°F for 10-14 minutes, or until the outsides are set and the middle is still slightly mushy.
  8. Let cookies rest for 10 mins to set the middle before enjoying!
