what you’ll need

for the baked oatmeal bars:

  • 2-1/2 cups of rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 (slightly mushy) bananas
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1-1/2 cups milk
  • 1 tsp vanilla
  • 1 cup blueberries

optional toppings:

  • another banan
  • more blueberries
  • could add nuts i guess if you aren’t planning on sharing or whatever 😡

instructions

  1. Preheat oven to 350F. Oil an 11×17 baking pan to prep.
  2. Combine dry ingredients (oats, baking powder, baking soda, cinnamon, and salt) in a large bowl.
  3. In a separate bowl, mash bananas then add eggs, maple syrup, milk, and vanilla. Mix until smooth and consistent- I used a hand mixer for this but its not required.
  4. Dump wet ingredients into bowl with dry ingredients and mix until combined well.
  5. Distribute evenly throughout your pan, and add toppings as desired.
  6. Bake for 40 minutes, or until cooked all the way through (hit that toothpick trick girl).
  7. Cut into bars and keep in fridge for up to 4 days.

tip/notes: i think adding protein powder could be nice if you wanted a boost! maybe add a smidge more milk to even out the wet/ dry ratio if you try it- and let me know how it goes!!
