what you’ll need

for the chicken marinade/ dressing

double this part of the recipe if you want to make a dressing to pour on top of the bowl- but remember to split BEFORE adding chicken to the marinade half bc of #salmonella

  • 2 tbsp harissa paste
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 6 tbsp olive oil
  • 1/2 tsp salt
  • 2 lbs chicken

for the rest of the bowl (these ingredients divided evenly into the 4 bowls)

  • 3 cups cooked rice
  • 1 cucumber
  • 1 can of corn
  • 2 cups spring mix
  • 2 avocados
  • 1 cup feta
  • 2 cups pickled onions (homemade is super easy check it out hereeee)
  • 2 cups tzatziki (homemade recipe here)
  • 1 cup hummus (again homemade because i can’t eat tahini and get poisoned by most premade ones)

instructions

  1. Beat chicken breasts and cut into 1-inch cubes.
  2. Combine marinade ingredients in a bag or tupperware. Add chicken and shake to coat evenly. Let marinate for at least 30 minutes.
  3. While the chicken is marinating, prep toppings: cook the rice, chop the veggies, and make the tzatziki and hummus (if you are looking at this now and haven’t prepared the onions yet… better luck tm)
  4. Cook the chicken- i like to put the chunks on skewers and grill but it could be seared in a skillet or baked in the oven as well. Dealers choice!
  5. Dump everything into one big bowl and devour! Or put the rice and chicken in one tupperware and all the cold toppings in another to pack for lunch for the week!

macros come from estimating only 8% of the marinade actually stays on the chicken to be consumed. and i didn’t use any for a sauce- im a tzatziki stan so i didn’t need anything else tbh

tip/notes: this is way more calories than i thought… perhaps not a cutting food but it is firreeeee
