what you’ll need

  • 1 roma tomato, diced
  • 1/2 cucumber, diced
  • 1/2 small red onion, diced
  • 2 tbsp cilantro, chopped
  • 1 small lime, juice
  • 1 tbsp olive oil

instructions

  1. Combine the tomato, cucumber, red onion and cilantro.
  2. Drizzle lime juice and olive oil over salad- mix well.
  3. Enjoy a large batch as a salad, or enjoy as a side in greek chicken bowl.
