what you’ll need
- 1 roma tomato, diced
- 1/2 cucumber, diced
- 1/2 small red onion, diced
- 2 tbsp cilantro, chopped
- 1 small lime, juice
- 1 tbsp olive oil
instructions
- Combine the tomato, cucumber, red onion and cilantro.
- Drizzle lime juice and olive oil over salad- mix well.
- Enjoy a large batch as a salad, or enjoy as a side in greek chicken bowl.
