what you’ll need

for the chicken (if you don’t get the pre-made Costco shit or have a fav marinade already)

  • 2 large chicken breasts, diced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1 tbsp olive oil
  • salt & pepper to taste

for the street corn

  • 2 cups corn kernels (fresh, frozen, canned- they all work)
  • 1/4 cup light mayo
  • 1/4 cup cotija cheese (!!!!! the money maker)
  • 1/2 tsp chili powder
  • juice of 1 lime
  • salt to taste

for the rest of the bowl

  • 4 cups cooked rice (jasmin, brown, basmati- dealers choice)
  • juice of 1 lime
  • 2 tbsp chopped cilantro
  • diced avocado
  • +whatever other toppings that suit your fancy

instructions

  1. Toss diced chicken with chili powder, smoked paprika, garlic powder, cumin, salt and pepper
  2. Cook as desired- throw that puppy on the grill, in a skillet, whatever. just make sure its 165°F internal pls
  3. In a separate bowl, combine the corn kernels, mayo, cotija, chili powder, lime juice, and salt. Mix her up
  4. Mix rice, lime juice and cilantro
  5. pack’er up:
    • items to be reheated go in the same tupperware: bed of rice, pile on the chicken, then scoop the corn on top
    • keep cold toppings separate & add on after reheating the first container!
